This is essentially my mom’s recipe for Chinese Chicken Salad. It was her go-to for almost every family party growing up. Her version is all lettuce. I add cabbage to make it a little more substantial. But no matter what you gotta have MAEBO ONE-TON CHIPS.

Ingredients
Salad
- 1 head curly or romaine lettuce washed, dried, torn
- 1/4 head nappa or regular cabbage sliced very thin
- 1/2 whole rotisserie chicken shredded
- 1/2 bunch green onion washed, chopped
- 1/2 bunch Chinese parsley washed, chopped
- 1 bag Maebo One-Ton Chips
- sesame seeds
Dressing
- 2 tablespoon sesame oil
- 3 tablespoon sugar
- 5 tablespoon rice vinegar
- 1/3 cup vegetable oil
- 1/2 teaspoon Salt
- 1/2 teaspoon fresh cracked pepper
- 1 teaspoon sesame seeds
Servings: People
Instructions
- Combine all ingredients for salad, except wonton chips. Chill in fridge.
- Combine all dressing ingredients in a bottle. Shake well.
- Just before serving, toss salad with dressing (or serve on the side)
- Top with MAEBO ONE-TON CHIPS and enjoy!
